The biggest sugar festival of the year has just ended, and as the lights in the jack-o-lanterns wink out, so does our immune function. Many of us wake up in the week after Hallowe’en with a sugar hangover. What does this look like you ask? A cold! A flu! That bug you’re fighting may just be your Hallowe’en hangover!
Did you know that sugar impairs your immune function? It literally ‘freezes’ your white blood cells, key soldiers in our immune army. Well, we have a solution for you: Emily’s delicious Pumpkin-Chia Immune Booster Pudding!
Pumpkin is absolutely packed with immune boosting Vitamin A and is an excellent source of Vitamin C t’boot. Vitamin A has antiviral properties while Vitamin C re-boots those frozen white blood cells. The delicious pudding recipe below will make use of all the leftover pumpkin from last week, boost your immune system, and provide a tasty treat for the dark nights that lay ahead.
Pumpkin Chia Pudding
- 1 1/2 cups of organic full fat coconut milk (not coconut cream)
- 1/2 cup organic pumpkin puree
- 2 tbsp 100% real maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon plus more for garnish
- 1/4 cup chia seeds
- pumpkin seeds for garnish
Instructions:
In mixing bowl, whisk coconut milk, pumpkin puree, maple syrup, vanilla and cinnamon until
combined. Stir in chia seeds. Pour into two glass jars and place in the fridge overnight. Garnish with
pumpkin seeds and cinnamon. Enjoy!
